Inevitably, five days later I find myself looking at not-so-fresh cilantro, with no salsa, pico de gallo or much else to show for it.
This time I had enough of my inexcusable behavior so I made pesto out of my cilantro that was quickly going to spoil.
I used this pesto on some homemade pizza dough before adding tomato sauce and it made my hypothetical skirt fly up. Ah-mazing.
1 cup fresh cilantro
1/2 cup olive oil
4 cloves garlic, peeled
1 tsp fresh lemon juice
1 tsp fresh ground black pepper
2 tsp kosher salt
1 tsp crushed red pepper flakes
1/2 cup grated Parmesan or Romano, grated
2 tbsp pine nuts
black pepper, to taste
1. Rinse cilantro and pat dry or let sit out until completely dry. This is important. You don't want watery pesto because your cilantro was wet! Trust me.
2. Put all ingredients in a food processor and pulse until throughly combined.
3. Enjoy on pizza, pasta, crackers or by the spoonful.
